Golden Oolong is a lightly roasted whole leaf oolong — the gentler of the two oolongs in this range, and the easier place to begin.
It is roasted once, and lightly. Roasting is where oolong is made or lost. A light roast warms and rounds the leaf without overwriting it, leaving the tea's softer, more floral character intact. It asks more of the roaster than a heavy hand does, because there is nowhere to hide a mistake beneath the char.
The leaf is rolled and whole — unbroken, no fannings, no dust. Rolled leaf opens slowly and evenly in the pot, which is why it brews clean rather than sharp.

Rinse first. Cover the leaf with hot water for five seconds and discard. This wakes the rolled leaf and improves the infusion that follows.
Watch the time. Rolled oolong opens quickly once wet. Three minutes is the ceiling, not the target — start at two and adjust to taste.
Pairings: Delicate desserts, soft cheeses, pastries, light seafood. Also good alone, mid-afternoon.
Storage: Airtight, away from light, heat and strong odours. Do not refrigerate. Best within twelve months of opening.
